if a non jew cooks food on shabat for many people, and among these people there is a jew can he eat this food? I have been told that it falls under the category of "marbe beshiur" but I learned many years ago that if a non jew cooks for himself and he cooks a lot more, a jew can eat it (not going into the bishul akum matter now). when can it be considered permissible and when is it marbe beshiur?

These halachas can be complicated, and a small change in the case can cause a significant change in the psak. In the specific scenario you posit, the question is whether the non-jew cooked extra for the Jew or not. If he did - he is marbe beshiur. However, if he cooked food for himself and other non-jews, and there is leftover food, it is okay for Jews to eat from that food.
